From Southern Living, April 2008. Each serving is 1/6 of the dish. Can also add cucumbers, if desired.

Recipe Ingredients for Tomato-Herb Pasta

1/2 cup rice vinegar
1 tbsp sugar
1 medium size red onion, thinly sliced
6 oz Whole Grain Spaghetti
2 medium tomatoes
4 green onions, thinly sliced
1/3 cup firmly packed rosemary leaves, chopped
50 g firmly packed fresh cilantro leaves, chopped
1/4 cup lime juice
2 tbsp olive oil
1 tsp salt
1/2 tsp dried crushed red pepper
1/4 cup chopped pecans

Recipe Directions for Tomato-Herb Pasta

  1. Whisk together vinegar and 1 Tbsp sugar in a bowl

  2. Add onion and let stand 30 minutes, then drain, reserving 2 Tbsp vinegar mixture

  3. Prepare pasta according to package directions

  4. Place chopped tomatoes and next 7 ingredients in a serving bowl

  5. Add hot cooked pasta, onion, and reserved vinegar mixture, gently tossing to combine

  6. Sprinkle with pecans
