This is a delicious, light summer salad, perfect for entertaining and a great side dish for barbecue or grilled foods. It is elegant and very pretty, especially with different colored vegetables, and should be served in a glass bowl. The original recipe calls for equal portions of lemon juice & olive oil (3 tbsp each), as well as 1/2 tsp kosher salt. I've adjusted for health but you should adjust the juice/oil ratio and salt to your taste.

Recipe Ingredients for Tomato Green Pepper Salad

2 cups tomato, chopped (about 2 large)
1 cucumber, peeled and chopped
1 bell pepper, chopped
1/4 cup scallions, finely chopped
1/4 cup parsley, finely minced
1 clove garlic, minced
2 tbsp olive oil
3 tbsp lemon juice
1/2 tsp cracked black pepper

Recipe Directions for Tomato Green Pepper Salad

  1. Chop the tomato, cucumber, and pepper into bite-sized pieces (1/2-1 inch, per your preference) and set aside.

  2. In a bowl, combine the lemon juice, olive oil, garlic, pepper, and salt, if used.

  3. Whisk until blended and blend in the parsley.

  4. Fold in the chopped vegetables and turn into a glass serving bowl.

  5. Cover and chill for at least an hour (can make in morning for serving at night).

  6. Garnish with parsley or mint sprigs, if desired.

  7. This is the basic recipe for quicker use. For better presentation when entertaining, you should peel and deseed the tomatoes and deseed the cucumbers. This will also reduce the liquid generated by both as it sits. To peel tomatoes, cut a shallow X at the bottom and immerse in boiling water for 5-10 seconds (less ripe tomatoes may need more time). Immerse in ice water after removing so the tomatoes don't cook. They should peel easily. To deseed cucumbers, cut in half lengthwise and use a spoon to scoop out seeds.

  8. It is very pretty to use different colored tomatoes or peppers. If the tomatoes are very ripe, this will not keep for long.
