Tomato Florentine Soup is lovely with a sprinkle of Parmesan cheese and a dollop of sour cream.

Recipe Ingredients for Tomato Florentine Soup

4 oz Pasta Shells
9 oz fresh spinach
1/2 cup diced onion
2 tsp Crushed Garlic
4 cups crushed tomatoes
3 tbsp tomato paste
4 cups chicken stock
1/4 cup brown sugar
3 tbsp lemon juice
1 Pepper to taste
2 tbsp olive oil

Recipe Directions for Tomato Florentine Soup

Sweat onion and garlic in olive oil. Cook the pasta, drain, and set aside. Put remaining ingredients, except spinach and pasta, into the pot with the onions and bring to boiling. Chop the spinach and add it to the pot a handful at a time. Add the pasta last. Thicken up with a slurry of 2 tsp corn starch in 2 tbsp water, if desired, to make it glossy.
