Tomato Fish Stew Recipe

Any thick white fish will work for this.

Recipe Ingredients for Tomato Fish Stew

4 fillet haddock
155 g mushrooms, sliced and drained
800 g Tomatoes, crushed
3 cloves garlic
1 large onion, diced
1 green pepper, diced
1 t cayenne pepper
1 t oregano
50 g margarine

Recipe Directions for Tomato Fish Stew

  1. Melt margarine in pot. Add onion and saute until clear.

  2. Add mushrooms, garlic then green pepper. Heat for a minute or two.

  3. Add spices and stir to mix. Add tomatoes and bring just to a boil, stiring to prevent burning.

  4. Arrainge fish in baking pan and top with hot mixture.

  5. Bake uncovered in a 350 F oven for 35 minutes, or until fish flakes.

  6. Serve over 1 cup rice.
