Mmmm... a yummy, healthy way to get your veggies! I use fat-free feta, reduces the cals per serving by 40 and the fat by 3 grams.

Recipe Ingredients for Tomato-Feta Pasta

1 1/2 lbs. ripe tomatoes, seeded & diced
2 garlic cloves, pressed
1/2 tbsp. olive oil
2 tbsp. fresh chives, chopped
1 tbsp. fresh basil, chopped
1 tsp. balsamic vinegar
2 ounces feta cheese, crumbled (1/2 cup)
3/4 lb. pasta, (fusilli, rigatoni, penne, etc.)
1/2 lb. green beans, trimmed and halved

Recipe Directions for Tomato-Feta Pasta

  1. Combine sauce ingredients in a mixing bowl. Add feta, let sit at least 15 min. @ room temp while pasta cooks.

  2. Cook pasta 5 min, add beans and cook till pasta is al dente; drain & toss with tomato mixture.
