I've taken some inspiration from this healthy "scramble" that I found over at Epicurious.com. While you can get all fussy about the exact recipe if you want, I tend to make things "girlfriend style"--a little of this and a little of that:

Recipe Ingredients for Tomato & Egg Scrambler

1 egg
1 medium diced tomato
1/2 cup of onion
1 ear of fresh corn
1 tbs fresh basil
1 slice of wheat toast
1 dash of salt and pepper

Recipe Directions for Tomato & Egg Scrambler

  1. Scramble an egg with one medium diced tomato and a half ear of fresh corn.

  2. I'd add some minced, fresh basil and other seasonings too, because I think basil and corn were made for each other (weird, I know).

  3. And, if you're feeling really wild, eat this breakfast with a half slice of whole-grain toast.
