Recipe Ingredients for Tomato egg sandwich

1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
12 7/10 grams Pork, Cured, Bacon
1 tsp Classic Dijon Mustard
1 large Egg, Whole
1/2 cup Arugula
1 tbsp Vinegar Balsamic
1/4 tsp Sea Salt
1 dash Pepper, Black

Recipe Directions for Tomato egg sandwich

Brown bacon. Cut tomato in 4 slices, salt and pepper, on 2 of them mustard and the bacon. Bake in the oven for 10 minutes at 200 degrees. Poach the egg.
