Recipe Ingredients for tomato croquettes

1 lb tomatoes
10 oz part-skim ricotta
2 eggs
2 egg yolks
2 tbsp parsley
1/4 tsp nutmeg
1 cup flour
1 cup bread crumbs

Recipe Directions for tomato croquettes

  1. Blanch tomatoes in boiling water 1 min. Drain and slip off skins. Remove seeds and chop.

  2. Mix ricotta and egg yolks in a large bowl. Add tomatoes, parsley, ntmeg, salt, and pepper. Mix well. Form into croquettes. If too runny add 1-2T bread crumbs or parmesan.

  3. Dredge in flour. Dip in egg. Roll in bread crumbs.

  4. Bake until done.
