This is a sauce that is supposed to be baked with chicken breasts, however I am a vegetarian so I just put it over rice.

Recipe Ingredients for tomato creole sauce

7 serving Tomatoes Diced Cut and Peeled No Salt Added
0.5 onion Yellow Onion
1 tbsp Extra Virgin Olive Oil
2 clove Garlic
1 tbsp chopped Shallots
1 medium Green Bell Pepper
1 tsp, crumbled Bay Leaf
1 dash Salt, Table
1/4 tsp Cayenne

Recipe Directions for tomato creole sauce

  1. In a large saute pan heat olive oil. Add onion (finely sliced), shallot (finely sliced), garlic (minced), and bell pepper chopped. Saute over medium heat until tender. Once tender add the tomatoes, bay leaf (1 whole), salt and cayenne. Simmer for 5 minutes.

  2. If making with chicken:

  3. Place 4 boneless skinless chicken breasts into a baking dish. Pour the sauce over the top and bake in a 350 degree oven for 15 to 20 minutes.
