Recipe Ingredients for Tomato-cream shrimp sauce

1/2 tsp oil
1/4 tsp red pepper flakes
1 tsp garlic, crushed
3 oz shrimp, cooked
1/4 c onion, diced
1/3 oz sherry
1 tsp paprika
1/2 c canned tomatoes, diced
1 tbsp sour cream
2 oz non-fat greek yogurt
1/4 tsp salt

Recipe Directions for Tomato-cream shrimp sauce

  1. heat red pepper and oil in a small skillet over medium high heat.

  2. add garlic and cook, stirring constantly until light brown (about a minute).

  3. add shrimp, and continue to stir until shrimp are warmed through.

  4. add onion and cook until translucent, about two minutes.

  5. add sherry and paprika.

  6. Stir thoroughly and reduce until sherry is sticky in the bottom of the pan (about a minute).

  7. reduce heat to low, and add tomatoes and salt.

  8. crush tomatoes against pan with back of spoon, leaving some chunks for texture.

  9. remove from heat and add yogurt and sour cream.

  10. Stir to incorporate.

  11. serve over pasta immediately.
