Tomato Cream Sauce with Prosciutto Recipe

Inspired by a tomato base sauce from my mentor in Italian cooking, Marcella Hazan.

Recipe Ingredients for Tomato Cream Sauce with Prosciutto

2 lbs plum tomatoes
1/4 cup olive oil
1/3 cup finely diced onion
1/3 cup diced celery
1/3 cup finely diced carrot
1/2 tsp salt
1/8 tsp sugar
4 oz mozarella
1/4 cup fresh basil
1 1/2 oz prosciutto, slivered
1/4 cup heavy cream

Recipe Directions for Tomato Cream Sauce with Prosciutto

  1. Quarter plum tomatoes and cook, covered over a brisk heat for 10 minutes. Reduce heat to low and slowly simmer tomatoes for another hour and a half uncovered.

  2. Put tomatoes through a seive or food mill to extract all juice and pulp. Discard the skins and seeds.

  3. Finely 1/4 inch dice onion, carrot and celery. Saute the onion first in the olive oil until translucent. Add carrot and celery and cook another 1 to 2 minutes. Add tomato puree and salt and bring to a simmer. Simmer for 20 minutes uncovered. Stir every so often.

  4. Add mozarella, prosciutto and heavy cream. Heat until sauce is quite warm and cheese begins to melt.

  5. Toss with penne or another similarly sized pasta of your liking. Serve in a large pasta dish. Sprinkle fresh basil over the top and serve to large smiles.
