Recipe Ingredients for Tomato courgette mushroom pasta sauce

1 tablespoon olive oil
1 tablespoon balsamic vinegar
4 ounces mushroom, thinly sliced
8 ounces cherry tomatoes, cut into halves
1 medium red onion, finely chopped
2 garlic cloves, finely chopped
1 courgette, sliced
3 ounces red pepper
10 fl oz stock, vegetable
1 teaspoon dried mixed herbs
1 salt and pepper, season to taste

Recipe Directions for Tomato courgette mushroom pasta sauce

Heat the oil and fry off the onions until soft but not browned, then add the garlic, red pepper, mushrooms and balsamic vinegar, then add the tomatoes cook, stirring frequently until soft now add the courgette and half the stock cook for further 2-3 minutes, then add the dried mixed herbs and season to taste, if needed add the rest of the stock. cook for a further 2 minutes covered and serve immediatly over pasta of your choice.
