Sun-dried tomato and cottage cheese

Recipe Ingredients for Tomato Cottage Cheese Muffins

1 cup cottage cheese (low fat)
3/4 cup parmesan
1/4 cup whole wheat flour
1 cup almonds, finely ground
1 tsp baking powder
1/4 cup sun-dried tomatoes, finely chopped
1/4 cup basil, finely chopped
1/4 cup water
4 eggs, lightly beaten
1/2 tsp salt

Recipe Directions for Tomato Cottage Cheese Muffins

  1. 400 degree oven for 30-35 minutes

  2. Pu the cottage cheese in a bowl with all but 1/4 cup pamesan, then add the rest of the ingredients.

  3. Spoon mixture in muffin cups 3/4 full, scatter remaining parmesan on tops.

  4. Bake until risen and golden brown on top.

  5. Serve hot or at room temperature
