Tomato, Corn, and Lima Bean Succotash

Recipe Ingredients for Tomato, Corn, and Lima Bean Succotash

1 tsp olive oil
6 ounces onion, diced
1 salt
1 clove garlic, minced
12 ounces tomatoes, chopped
2 ears corn, stripped
8 ounces lima beans
2 tbsp basil, chifonnade

Recipe Directions for Tomato, Corn, and Lima Bean Succotash

  1. Heat oil in heavy large skillet over medium heat. Add onion and sprinkle with coarse salt. Sauté until soft and translucent, about 5 minutes.

  2. Add garlic; stir until fragrant, about 1 minute. Add tomatoes, corn, and lima beans.

  3. Reduce heat to medium-low, cover, and simmer until corn and lima beans are tender and tomatoes are soft, about 20 minutes, stirring occasionally.

  4. Season to taste with salt and pepper. Stir in basil and serve.
