In a large bowl, combine chick peas, chopped parsley, large diced greenhouse tomatoes, chopped cucumber, sliced green onions and crumbled feta cheese.

Recipe Ingredients for Tomato Chick Pea Salad

19 oz Unico Chick Peas
1 cup Parsley
17 oz Tomatoes
1 cup, pared, chopped Cucumber, Peeled
6 medium (4-1/8" long) Onions, Spring Or Scallions
100 grams Feta Cheese
1 tbsp Olive Oil
9 teaspoon Vinegar Wine White
1 clove Garlic

Recipe Directions for Tomato Chick Pea Salad

Whisk together oil, vinegar, garlic, 1 tsp dried tarragon leaves, 1/2 tsp salt, 1/2 tsp dry mustard, 1/4 tsp freshly ground pepper and a pinch of cayenne pepper. Toss dressing with salad ingredients. Cover and refrigerate for several house. Makes 6 to 8 servings.
