Recipe Ingredients for Tomato, Cauliflower, and Carrot with Basil

24 ounces carrots
3 cups cauliflower, chopped florets
24 ounces tomatoes
6 tablespoons margarine, unsalted
1 1/2 cups cheddar cheese, grated
15 basil leaves, medium sized

Recipe Directions for Tomato, Cauliflower, and Carrot with Basil

  1. Put the carrots in a small saucepan, cover with boiling water, and simmer, covered, for 10 minutes.

  2. Add the cauliflower and cook, covered, for 7 to 8 minutes, adding extra water if necessary.

  3. Meanwhile, melt the butter in another pan, add the tomatoes, and saute until mushy.

  4. Remove from the heat and stir in the basil and cheese until melted.

  5. Puree the carrots and cauliflower with the tomato sauce and about 9 tablespoons of the cooking liquid.
