Recipe Ingredients for Tomato Carrot Soup

4 tablespoons unsalted butter
2 onions
1 pound carrots
2 teaspoons curry powder
14 large plum tomatoes
4 cups chicken broth (4 tsp. bouillon + 4 cups water)
12 tablespoon basil leaves
1/4 teaspoon pepper

Recipe Directions for Tomato Carrot Soup

  1. Melt butter in soup pot. Add onion and ccok for 5 minutes. Add carrots and curry powder. Cover and cook 20 minutes more, until vegetables are tender.

  2. Add choped tomatoes and chicken broth to saucepan with vegetables. Bring to a boil, lower heat and simmer for 20 minutes. Add basil and pepper. Simmer 1 minute.
