This is a garlicky tomato-carrot sauce that tastes great over spaghetti, spaghetti squash or any veggie. The serving size is 1/2 cup though I generally use quite a bit more.

Recipe Ingredients for Tomato Carrot Sauce

1 tablespoon butter without salt
1 onion, chopped
3 garlic cloves, chopped
4 medium tomatoes, peeled, seeded, and coarsely chopped
1 cup plum tomatoes
3 medium carrots, peeled and cut into chunks
1/2 cup chicken stock

Recipe Directions for Tomato Carrot Sauce

  1. Melt the butter, add the onion and garlic. Sauté for 3 minutes or so.

  2. Add all the remaining ingredients, bring to a boil and lower heat, simmering for 30 minutes.

  3. Purée with an immersion blender or a regular blender or food processor.

  4. This sauce freezes well.
