Toasted stale bread is more able to stand up to tomato juices and olive oil than is fresh bread.

Recipe Ingredients for Tomato Bruschetta

2 thick slices Italian bread
1 large tomatoes, very ripe
1/2 tbsp basil leaves, cut into ribbons
2 clove garlic
1 tbsp. olive oil, extra virgin

  2. Cut tomatoes in half along the "equator", squeeze out the seeds from each half, chop coarsely, put in a medium bowl, add olive oil and gently toss.
