This is the most amazing salad! Try it with fresh from the garden beef steak tomatoes as part of your summer barbecues.

Recipe Ingredients for Tomato Bread Salad

4 tomatoes
2 tbsp basil
1/2 c parsley
2 green onions
4 oz italian bread
1 tbsp red wine vinegar
1 clove garlic
1/4 c olive oil
1 tbsp Dijon mustard

Recipe Directions for Tomato Bread Salad

  1. In a small bowl, combine the oil and garlic. Let the mixture stand for 30 minutes while other items are prepped, then strain out the garlic and keep the oil.

  2. Cube the bread into 1/2" cubes. Toast at 350 degrees for 15-20 minutes. Place in salad bowl and add 1/2 of olive oil, then toss to mix.

  3. Chop tomatoes. Add parsley, green onion and basil.

  4. Combine last 1/2 of olive oil with dijon mustard.

  5. Add tomatoes to bread. Top with dressing and toss to mix everything.
