Recipe Ingredients for Tomato & Black Bean Soup

0.5 medium raw Onion Yellow
1 cloves, raw Garlic
0.75 medium raw Bell Pepper Green
0.5 tsp Chili Powder
0.5 tsp Cumin
15 oz Black Beans Drained and Rinsed
10 oz Mild Diced Tomatoes and Green Chilies
1/2 cup Corn, Sweet, Yellow
1.5 cup Light
0.3 tablespoon Oregano
0.33 tbsp Soy Sauce
0.33 tbsp Apple Cider Vinegar, Unfiltered, Organic
1 serving Original Cayenne Pepper Sauce
0.5 lime yields Lime Juice
1 dash Salt, Table

Recipe Directions for Tomato & Black Bean Soup

  1. Heat the oil in a large soup pot over medium heat. Add the onion and saute 3-4 minutes until soft. Add the garlic and red bell pepper, and saute about 30 seconds. Add the chili pepper and cumin, and stir until combined. Add the black beans, tomatoes, corn, broth, water, oregano, red pepper flakes and worcestershire sauce. Stir and simmer about 15 minutes.

  2. Transfer half of the soup to a food processor or blender. DON?T BLEND YET. Let soup sit in there about 10 minutes to cool off. Then blend until creamy. Add the blended half of the soup back to the pot with the unblended soup. Add lime juice and salt. Garnish with green onions and cilantro. You can also use crushed tortilla chips, lime wedges, red pepper strips or avocado!
