A charming tomato soup I found while looking for a recipe similar to a small tea shop I frequent. I altered the recipe to suit my taste. You may add more mushrooms or cream to it.

Recipe Ingredients for Tomato Bisque with Dillweed

1 medium raw Leeks
1 stalk, medium (7-1/2" - 8" long) Celery
4 clove Garlic
3 tbsp Light Butter with Canola Oil
1.5 cup pieces Mushrooms
32 oz Original Diced Tomatoes
3 cup Vegetable Broth
0.33 cup Cream, Fluid, Half And Half
3 oz Tomato Paste
1 tsp Pepper, Black
2 tsp Dill Weed, Dried

Recipe Directions for Tomato Bisque with Dillweed

  1. Add the leek, celery, garlic, and butter to a large saucepan and cook over medium heat until vegetables are tender, about 10 minutes.

  2. Add to the saucepan the following: mushrooms, tomatoes, and vegetable broth.

  3. Return the mixture to the saucepan and add the following: cream, pepper, and dried dill weed.

  4. Add salt to taste.
