Hearty rice stew, mostly vegetables, but beefy flavor.

Recipe Ingredients for tomato, beef and eggplant rissoto

6 oz. beef chuck
1 cup brown rice
12 oz. diced tomatoes
1 can beef broth
2 cups mushrooms
1 large onion
1 cup diced carrots
2 roasted peppers
1/2 sliced eggplant
3 cups water
1 tsp. mint, dried
1 tsp mint, dried
1 tsp oregano, dried
1 tsp basil, dried
2 cloves garlic
1/2 tsp. rosemary, dried
1 tbsp paprika
1/2 tsp fresh ground black pepper
1 tsp. salt

Recipe Directions for tomato, beef and eggplant rissoto

  1. Sautee mushrooms, onion and eggplant in olive oil.

  2. Add leftover chuck roast, carrots and peppers

  3. Add tomatoes, beef broth, and water

  4. Bring to a boil, and add rice

  5. Add seasonings: oregano, bee balm, mint, basil, garlic, paprika, salt and fresh ground black pepper

  6. Cover and simmer over low heat for about an hour

  7. Uncover, and stir while simmering for about another 20 minutes, or until thickened (rissoto texture)

  8. Serve with good bread and a green salad
