Recipe Ingredients for Tomato Bean Veggie Soup

32 ounces chicken broth, low sodium
28 ounces tomatoes, crushed, canned
15 ounces navy beans
15 ounces sweet corn
1 tbsp olive oil
8 ounces frozen spinach
1 medium onion, diced
3 cloves garlic, minced

Recipe Directions for Tomato Bean Veggie Soup

Heat oil in stock pan. Sautee garlic and onions until softened. Add tomatoes, broth and beans. Bring to a boil and cook until heated through, 15 minutes or so. Puree with immersion blender until smooth. Add spinach and corn. Cook soup through for another 10-15 minutes. Serve with sour, dark bread. Add salt, pepper, thyme, corriander and tarragon to taste.
