A thick rich soup, high in fiber and low in calories and fat. 1 serving is 2 points on WW. Can be made low sodium by using low sodium Taco seasoning EASY VERSION- Replace separate beans with 1 pkg (10 oz) GOYA 16 Bean Soup mix

Recipe Ingredients for TOMATO - BEAN STEW

8 strips bacon, cooked crisp and crumbled
4 oz pinto beans, dried
4 oz black beans, dried
2 oz peas, split green, dried
2 oz kidney beans,red, dried
4 oz great northern beans, dried
1 cup celery, diced
1 cup onion, chopped
6 cups water
30 1/2 oz whole kernel corn, undrained
2 1/2 oz Taco seasoning, low sodium
56 oz diced tomatoes, low sodium
4 tsp sugar

Recipe Directions for TOMATO - BEAN STEW

  1. In a large crockpot, combine all ingredients EXCEPT

  2. Tomatoes and sugar (tomatoes will prevent beans from softening) Mix well

  3. Cover and cook on low setting for 8 to 10 hours or until beans are tender

  4. Add Tomatoes and Sugar. Mix well

  5. Cover and cook and additional 15 - 30 minutes or until thoroughly heated
