Tomato Bean Soup w/Amaranth and Spinach

Recipe Ingredients for Tomato Bean Soup w/Amaranth and Spinach

2/3 cup amaranth
1 leek, chopped
1 tbsp olive oil
3 cloves garlic, minced
4 cups stock
1 1/2 cups fire roasted crushed tomatoes
1 1/4 cups great northern Beans, cooked
2 cups spinach
1 cup fresh basil
1 tbsp oregano

Recipe Directions for Tomato Bean Soup w/Amaranth and Spinach

  1. Saute chopped leeks in oil until golden, then add garlic for 1 minute.

  2. Add amaranth, veggie stock, can of crushed tomatoes and bay leaf. Bring to boil, then reduce to simmer, 30 minutes.

  3. Put 1 can of cannellini beans in food processor. Add some broth mixture and blend until smooth. Add to pot.

  4. Add remaining beans, spinach, basil, oregano. Cook 5 minutes. Remove bay leaf.
