Healthy, quick, and easy whitefish with tomatoes.

Recipe Ingredients for Tomato, Basil Whitefish

12 oz Tilapia
8 Plum Tomatoes
3 cloves garlic
2 tablespoons basil
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon black pepper

Recipe Directions for Tomato, Basil Whitefish

  1. Preheat oven to 350. Roughly chop tomatoes. Mix with with garlic, basil, and evoo. Roast for 30min in oven.

  2. Lightly top fish with salt/pepper. Layer fish on top of tomatoes. Roast for 10-15min until fish is flaky and cooked.

  3. Serve on top of polenta, mashed potatoes or with bread to enjoy the great juices.
