Recipe Ingredients for Tomato Basil Soup - Veganized

1/2 c shallot, minced
4 garlic cloves, minced
1 tbsp olive oil
4 tomatoes, seeded and diced
4 cups tomato juice
2 c vegetable broth
14 leaves fresh basil
4 medium carrots, finely chopped
1/2 cup soy creamer
1/4 cup Earth Balance butter

Recipe Directions for Tomato Basil Soup - Veganized

  1. Heat the olive oil in a pot over medium heat. Add the shallot and garlic and cook until fragrant. Add the tomatoes, tomato juice, and optional no-chicken broth and bring to a boil. Lower the heat and simmer for 30 minutes.

  2. Add the basil leaves to the mixture and puree using an immersion blender until smooth.

  3. Add the carrots and raise the heat to medium. When the carrots are cooked (less than 10 minutes), stir in the soy creamer and vegan butter, heating until the butter has melted and the creamer is heated.

  4. Garnish with fresh basil and serve.
