Recipe Ingredients for Tomato Basil Soup (Robert)

2 tbsp basil olive oil
1 tbsp lemon juice
1 cube chicken stock (= 1 cup)
2 cups heavy whipping cream
16 large tomatoes, cored and diced, save juice
2 tsp seasoned salt (Chachere?s More Spice Seasoning)
1 tbsp sugar
4 tsp basil pesto
1 medium yellow onion, diced
1 medium sweet pepper, diced (pablano pepper)
4 cloves garlic, minced
1 tbsp oregano
2 tsp ground thyme
2 tsp marjoram

Recipe Directions for Tomato Basil Soup (Robert)

  1. Puree? majority of tomatoes but leave some diced for texture

  2. Using non-reactive cookware, sauté onion, pablano pepper, garlic in olive oil and Chachere?s in a large stockpot for about 2 minutes

  3. Add oregano, thyme, marjoram, and sauté for another 2 minutes

  4. Pre-mix chicken stock and lemon juice in a separate bowl

  5. Stir in tomatoes and juice

  6. Stir in stock and lemon juice mixture

  7. Add sugar and basil

  8. Bring to a boil, reduce heat and simmer for about 30 minutes

  9. Add heavy whipping cream, heat but do not boil

  10. Garnish with a swirl of cream, avocado and or tomato wedges if desired

  11. Serving size ~ 1 cup
