1/4 onion, coarsely chopped 1 garlic clove 1/4 cup fresh basil leaves (pressed down) 14 ounce can chopped tomatoes with their juice (no salt added) 1/8 cup water 3/8 cup vegetable juice cocktail pinch freshly ground pepper 1/4 cup soy or rice milk

Recipe Ingredients for TOMATO BASIL SOUP

0.25 medium (2-1/2" dia) Onions
1 clove Garlic
1/4 cup leaves, whole Basil, Fresh
1 serving Diced Tomatoes - no salt added (Great Value) 14.5 oz can
0.44 serving Vegetable Juice Cocktail (Golden Crown) - 8 oz
0.03 tsp Ground Black Pepper
0.25 serving Soy Milk (Silk) light original 1 cup

Recipe Directions for TOMATO BASIL SOUP

Place all ingredients, except milk, in a large pot. Bring to a boil, reduce heat, cover and simmer for 1 hours. Puree in batches in a blender and return to pot. Add soy or rice milk and reheat. Do not boil. Serve at once.
