Recipe Ingredients for Tomato Basil Soup

1 onion, medium
1 tablespoon olive oil
12 tomatoes
4 cups chicken broth
6 T basil, sliced in thin strips
1 teaspoon shallot, minced
2 teaspoons balsamic vinegar
1 cup milk, evaporated skimmed
1/4 t salt
1/4 t pepper

Recipe Directions for Tomato Basil Soup

  1. Saute sliced onion and shallot in olive oil in a heavy bottomed pan

  2. Cook over medium heat until soft, about 7 minutes.

  3. Add tomatoes chopped in large pieces, basil, chicken broth, salt and pepper.

  4. Bring to a boil, lower heat and reduce soup by 1/4. (I actually measure to be sure it?s reduced enough!).

  5. Cool down.

  6. Puree soup mixture in blender in small portions and save in glass container in fridge until ready to serve.

  7. When ready to serve, heat soup and add balsamic vinegar Warm the cream and then stir it in to prevent curdling.

  8. Serve with a basil garnish if you wish.

  9. Also delicious served cold!
