Delicious rich soup with no cream

Recipe Ingredients for Tomato Basil Soup

4 lbs tomatos
28 oz diced tomatoes
1 large onion
1 cup basil
2 tsp salt
1 tsp red pepper flakes
1 cup water
1 tbsp pepper
1/4 cup olive oil
12 cloves garlic

Recipe Directions for Tomato Basil Soup

  1. Dice tomatoes and peel garlic. Drizzle with oil. Roast in baking dish at 500 for 45 minutes

  2. In large pot, sweat onions for 8 minutes

  3. Add canned tomatoes, roasted tomatoes and garlic, and remaining ingredients

  4. Simmer for 20 mnutes. Blend using immersion blender
