Light and fresh tomato basil soup

Recipe Ingredients for Tomato Basil Soup

1 tbsp extra virgin olive oil
3 garlic cloves, minced
4 cups chicken broth
1/2 tbsp salt
43 1/2 oz diced tomatoes (3 cans)
2 cups fresh basil leaves, thinly sliced
3/4 cup half and half

Recipe Directions for Tomato Basil Soup

  1. Heat oil in a large saucepan. Add garlic, cook 30 seconds, stirring constantly.

  2. Add broth, salt, and tomatoes. Bring to a boil and let simmer for 20 minutes. Stir in basil.

  3. Add half and half, then process soup in blender until smooth.
