Recipe Ingredients for Tomato Basil Soup

28 ounce whole tomatoes
3 cups tomato juice
2 cups chicken stock
15 basil leaves
1 1/2 cups whipping cream
1 1/2 sticks butter
1/2 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Tomato Basil Soup

  1. Combine tomatoes, tomato juice, and chicken stock in a large saucepan.

  2. Simmer 30 minutes.

  3. Add basil.

  4. Transfer soup in batches to a food processor or blender and process until smooth, or use a hand blender.

  5. Return to saucepan over low heat.

  6. Whisk in cream, butter, salt, and pepper.

  7. Whisk until butter is melted and soup is throughly heated.

  8. (Optional) Garnish with parmesan.
