Recipe Ingredients for Tomato Basil Soup

7 med tomatoes, skinned and chopped
1 large onion, diced
1 jalapeno pepper, minced
1/2 cup basil, chopped
2 cloves garlic

Recipe Directions for Tomato Basil Soup

  1. Chop the onion, and sweat down in water or stock.

  2. Chop the jalapeno pepper and garlic and add to the onions.

  3. Skin the tomatoes by immersing in each boiling water for about a minute. Chop and add to the onions. Bring to a boil and simmer for about 20 mins.

  4. Chop the basil and add to the mixture.

  5. Using blender (hand held or traditional), blend until creamy.

  6. Can add some soy milk for added creaminess (optional)
