Recipe Ingredients for Tomato Basil Soup 2

3 tablespoons butter
1/4 cup onion, finely diced
1/4 teaspoon thyme
2 cups chicken broth
28 ounce diced tomatoes or tomato puree
1 tbsp sugar
6 oz evaporated milk
18 leaves fresh basil, chopped
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Tomato Basil Soup 2

  1. In a -4 quart saucepan, saute the onions in oil until the onions are transparent. Add thyme and stir.

  2. Add broth and tomatoes with juice. Cover and simmer about 15 minutes.

  3. Off the heat add the sugar, half and half and basil. Puree until desired texture is achieved. Taste for salt and pepper.

  4. Return to pan and reheat but do not boil. Serve with croutons
