Recipe Ingredients for Tomato Basil Shrimp Orzo

1 tbsp olive oil
224 grams small shrimp, peeled and deveined
3 garlic cloves, minced
3/4 cup dry white wine
2 pints grape tomatoes, halved
1/4 cup finely chopped fresh basil
1 cup baby spinach, finely chopped
1/2 tsp. salt
1/4 tsp pepper, and crushed red pepper
84 grams orzo, whole wheat

Recipe Directions for Tomato Basil Shrimp Orzo

  1. Cook shrimp in 1/2 the oil, set aside

  2. Cook red pepper flakes and garlic in the other 1/2 of oil, 30 seconds, add wine, cook for 3 minutes, add basil, spinach and tomotoes, cook till warm- then add shrimp. Season with salt and pepper, serve 1.5 cups of mixture over 3/4 c. orzo!
