Make a basic tomato sauce and then jazz it up with one of the variations using sage, goat cheese, or balsamic vinegar in addition to or instead of basil.

Recipe Ingredients for Tomato basil sauce

3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 1tsp Vegetable Oil, Coconut
1 clove Garlic
1/4 cup leaves, whole Basil, Fresh
0.5 cup, chopped Onions
0.3 glass (3.5 fl oz) Wine, Table, White
1 grams Rock Salt and Black Pepper Crisps
2 grams Chilly Powder Kashmiri
1 cup (8 fl oz) Water

Recipe Directions for Tomato basil sauce

  1. In a large heavy skillet, heat the coconut oil over medium-high heat. Saute the onion for 2 to 3 minutes, reduce the heat to medium, cover and sweat the vegetables over medium heat for about 10 minutes or until soft and golden.

  2. Add the garlic, stir well, cover and sweat for 5 minutes more or until softened. Add the tomatoes. Bring to a boil, reduce the heat to medium-low and simmer, uncovered, for about 10 minutes to blend the flavors.

  3. Add salt and chilli powder to taste. Add basil after the sauce is cooked.

  4. The sauce can be cooled and stored in the refrigerator for up to 1 week or frozen up to 3 months.
