Tomato, Basil, and Roasted Pepper Couscous

Recipe Ingredients for Tomato, Basil, and Roasted Pepper Couscous

1 cup couscous, dry
3 cloves garlic
1 c tomato
1 onion
0.66 c basil, fresh
2 T olive oil
2 T balsamic vinegar
4 T lemon juice, fresh
1 c corn, frozen
1/2 t dijon mustard
4 small bell peppers, roasted
1 dash kosher salt

Recipe Directions for Tomato, Basil, and Roasted Pepper Couscous

Roast peppers. Meanwhile, cook onions and garlic in oil, add couscous and water and cook. Mix it all together.
