Tomato and Basil Risotto Recipe

Recipe Ingredients for Tomato and Basil Risotto

1 1/2 c tomatoes
2 1/2 c vegetable broth
2 1/2 c water
1 tbsp olive oil
3/4 c shallots, chopped
1 3/4 c arborio rice
1/2 c fresh basil, torn
1/4 c cooking sherry

Recipe Directions for Tomato and Basil Risotto

  1. Put the tomatoes in a bowl and cover with boiling water. After 20 seconds in the boiling water, plunge them straight into cold water. Drain and skin the tomatoes, then dice.

  2. Heat the broth and water in a saucepan until just simmering.

  3. Heat the oil in a large saucepan and saute the shallots for 5 minutes, or until softened. Add the rice and stir until well coated.

  4. Add a splash of sherry and stir until absorbed. Add the broth in 1/2-cup amounts and stir until the broth is absorbed before adding more. Taste the rice towards the end of the broth as it may not need all 5 cups to cook completely.

  5. When almost all of the broth has been absorbed, add the diced tomatoes. Once the liquid has been absorbed, remove from the heat and stir in the fresh basil with salt to taste.
