Breakfast or lunch, great leftover! Use a ovenproof pan (I used cast iron)

Recipe Ingredients for Tomato Basil Fritatta

10 eggs
1 cup fresh mozzarella
1 cup Basil, chopped
4 roma tomatoes, chopped
3 tbs cream
1/2 cup shallots, chopped

Recipe Directions for Tomato Basil Fritatta

  1. Preheat oven to 350F.

  2. Beat eggs, add cream (or milk), fresh mozzarella, add salt and pepper and herbs (ie. chives, etc).

  3. Over medium-low heat sautee shallots in olive oil until soft

  4. add in egg mixture and tomatoes. Gently stir the eggs occasionally until large soft curds form. Shake pan to evenly distribute eggs and let cook undisturbed until bottom sets (about 1-2 minute).

  5. Put pan in oven and cook for 15-20min until set. Let cool for 5 minutes, slice and serve.

  6. Very nice with a side salad of spring greens.
