Recipe Ingredients for Tomato Basil Eggs

1 t olive oil
1 clove garlic
170 g tomato
2 large eggs
3 basil leaves

Recipe Directions for Tomato Basil Eggs

  1. Mince garlic and saute 30 seconds in olive oil.

  2. Add chopped tomatos, add kosher salt to taste.

  3. Cook tomatos until they release liquid. Add chopped basil.

  4. Make well in center of tomatos and crack eggs into.

  5. Place lid on pan and cook until whites are set. Serve

  6. Good on a slice of crusty baguette or toasted italian bread.
