Recipe Ingredients for Tomato, Basil & Couscous Salad

2 1/4 cups canned vegetable broth
10 oz. couscous
1 cup chopped green onions
2 cups sliced tomatoes (cherry or grape)
1/2 cup thinly sliced fresh basil
1/4 cup olive oil
1/4 cup balsamic vinegar
1/4 teaspoon dried crushed red pepper

Recipe Directions for Tomato, Basil & Couscous Salad

  1. Bring broth to boil in medium saucepan. Add couscous. Remove from heat. Cover; let stand 5 minutes. Transfer to large bowl. Fluff with fork. Cool.

  2. Mix all ingredients. Season with salt & pepper. (Can be made 1 day ahead. Chill.)
