A Hearty Chicken & Pasta Dish

Recipe Ingredients for Tomato/Basil Chicken Penne

454 grams penne rigate
1/2 lb boneless chicken breast, cooked
2 tbs basil pesto
14 oz canned tomatoes with herbs
1 tbs italian seasoning
1/4 cup light cream
28 oz tomato juice, reduced sodium
1 onion, diced
4 tbs parmesan cheese
1 salt and pepper to taste

Recipe Directions for Tomato/Basil Chicken Penne

  1. Combine the tomatoes, juice, seasoning, onion and pasta in a large pot and simmer until pasta is almost done.

  2. Stir to keep the pasta from sticking to the bottom of the pot.

  3. Combine the pesto, cream parmesan cheese, and set aside.

  4. Dice the chicken into bite sized pieces and add to tomatoes and pasta.

  5. Continue to simmer and stir until the pasta is al-dente.

  6. Add the pesto mixture and stir to combine.

  7. Allow to thicken off the heat for about 5 minutes.

  8. Serve in pasta bowls with additional cheese to taste.
