Brothy soup. Good starting point to add the herbs & veggies you like. Can puree some to make it ?creamy.?

Recipe Ingredients for Tomato Barley Soup

1 cup onions, chopped
1 cup celery, chopped
1 cup carrots, chopped
2 t garlic, minced
1 T olive oil
2 1/2 c water
2 tomatoes, diced
1 lb tomatoes, canned
11 ounces broth
1/4 cup barley, raw
1/8 t pepper

Recipe Directions for Tomato Barley Soup

  1. In a large saucepan over medium heat, lightly toast barley. Set aside. Add the onions and oil to the pot. Sauté to lightly caramelize. Add celery, carrots, and garlic. Sauté for 5 to 10 minutes. Veggies should not be tender.

  2. Then add the water, fresh tomatoes, canned tomatoes, broth, barley and ground black pepper.

  3. Stir thoroughly and bring to a boil. Reduce heat to low and simmer for 35 to 40 minutes, or until barley is tender.
