Chicken thighs baked in a rich tomato & mushrooms sauce

Recipe Ingredients for Tomato Baked Chicken

500 g
1 large tomato
50 g
110 g mushrooms
2 tbsp olive oil
1 tsp salt
1 tsp oregano
2 tbsp white wine
1/2 tsp black pepper

Recipe Directions for Tomato Baked Chicken

  1. Preheat oven at 210C.

  2. Wash chicken thighs and arrange in deep naking pan.

  3. Add spices to chicken.

  4. Put tomato, tomato sauce, olive oil and wine in food processor and work until you have a smooth puree.

  5. Add mushrooms to tomato puree.

  6. Pour puree over chicken pieces, shaking the pan a bit so that it goes everywhere.

  7. Bake for about an hour.

  8. Serve with fries, rice or mashed potatoes.
