A nice sauce for pasta or potato bake or even baked potatos

Recipe Ingredients for Tomato, Bacon and Cheese sauce

1 tsp olive oil
1 onion, diced
1 celery stalk, chopped
1 carrot, chopped
1 garlic clove, crushed
1 slice back bacon, diced
200 g chopped tomatos
1 tsp tomato puree
90 g mushrooms, sliced
100 g low fat cream cheese

Recipe Directions for Tomato, Bacon and Cheese sauce

  1. Heat the olive oil in a non-stick pan. Add the onion, celery and carrot, stir well. Cover with a lid and allow to sweat for 8-10 minutes, stirring occasionally.

  2. Increase the heat slightly, add the garlic and bacon. Allow the bacon to cook through, then add the chopped tomatoes and tomato puree and simmer, uncovered for 10 minutes.

  3. Add the mushrooms and simmer for a further 10 minutes. Stir in the philadelphia and allow to melt. If a smoother sauce is preferred, blend the sauce with an immersion blender or food processor before serving.
