Omelet stuffed with a tomato/avocado fill. You can use fat-free sour cream in place of regular sour cream.

Recipe Ingredients for Tomato & Avocado Stuffed Omelet

1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 medium Avocado
0.13 tsp Dill Weed, Dried
0.33 serving Sour Cream
4 egg Organic All Natural Large Egg

Recipe Directions for Tomato & Avocado Stuffed Omelet

  1. Dice/drain medium tomato. Peel/dice 1/2 avocado. Mix tomato, avocado, dill weed into sour cream; set aside. Spray 8-inch nonstick skillet with cooking spray; heat until hot.

  2. In small bowl, beat eggs with wire whisk or fork until blended. Quickly pour half of the eggs (about 1/2 cup) into skillet. Slide skillet back and forth rapidly over heat and at the same time quickly stir with a fork to spread eggs continuously over bottom of skillet as they thicken. Let stand over heat a few seconds to brown bottom of omelet very lightly. (Do not overcook - omelet will continue to cook after folding)

  3. Tilt skillet and run fork under edge of omelet, then jerk skillet sharply to loosen from bottom of skillet. Spoon half of sour cream mistures onto center of omelet. Fold portion of omelet nearest you just to center. (Allow for portion of omelet to slide up side of skillt.) Turn omelet onto plate, flipping folded portion of omelet over so far side is on bottom, tuck sides under if necessary. Repeat with remaining ingredients to make second omelet.
