Breathtakingly delicious salad - goes great with a nice broiled salmon fillet

Recipe Ingredients for Tomato, Avocado & Roasted Corn Salad

15 oz corn
3 c lettuce
1 tomato, beefsteak, sliced
1 avocado, diced
1 onion, red, sliced thin
1/2 c Cheddar cheese, finely diced
2 tsp ground pepper
1 tbs vinegar, sherry
1 tsp lime juice
1 tsp shallot, minced
1 tsp cilantro, chopped
1 tsp parsley, chopped
1/2 tsp thyme
1 chipotle pepper, drained and minced
1 garlic clove, minced
1/2 tsp maple syrup
3/4 c water

Recipe Directions for Tomato, Avocado & Roasted Corn Salad

  1. Roast 2 ears corn, unshucked in a 400-degree oven for about 45 minutes; remove from oven, cool completely. OR - open a can of corn.

  2. Mix vinegar, lime juice, shallot, cilantro, parsley, thyme, chipotle, garlic, maple syrup and water to make dressing. Add salt & pepper to taste

  3. Toss lettuce with 1/4 c dressing. Arrange on plates. Layer tomato, avocado and onion slices over lettuce. Sprinkle with cheese and corn. Drizzle additional dressing if desired, or just pass it.

  4. Serve immediately.
