This is a high protein low carb. breakfast that leaves you feeling full. Takes15 to 20 minutes from prep. to finish.

Recipe Ingredients for Tomato, Avocado, Fritatta

2 g g Egg, Whole [1132] serving
1/4 c. avocado
1/4 c. diced tomato
1 white button mushroom
1/8 tsp. salt
1 Cooking Spray

Recipe Directions for Tomato, Avocado, Fritatta

Dice avocado, mushroom, and tomato. Lightly spray nonstick pan with cooking spray. Place pan on stove at medium heat. Allow a couple minutes for the pan to warm up. (You can turn the pan on while dicing the veggies if you cut fast enough.) Beat eggs in a separate dish until whites and yolks are mixed. Add eggs, diced avocado, diced mushroom, diced tomato, and salt to hot pan. Cook on one side until eggs are cooked. (If you don't care how pretty it looks you can flip it over once eggs are almost set, to speed up cooking time.)
